Ingredients
  

For the Roasted Carrots

  • 1 pound organic baby carrots Washed and peeled
  • 3 tablespoons olive oil For roasting
  • 2 tablespoons honey For sweetness
  • 1 teaspoon ground cumin For flavor
  • 1/2 teaspoon paprika For color
  • 1/2 teaspoon ground cinnamon Adds warmth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Fresh chopped parsley for serving Garnish

For the Whipped Feta Dip

  • 6 ounces feta cheese Creamy base
  • 2 ounces cream cheese For richness
  • 2 tablespoons lemon juice Adds acidity
  • 1/3 cup olive oil For blending
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Spread washed and peeled carrots on a baking sheet, halving larger ones if necessary.
  • In a small bowl, combine olive oil, honey, cumin, paprika, cinnamon, salt, and black pepper. Whisk until blended.
  • Pour the mixture over the carrots and toss until fully coated.

Cooking

  • Roast in the preheated oven for 20-25 minutes or until tender and golden brown.

Making the Whipped Feta

  • In a food processor, blend together feta cheese, cream cheese, lemon juice, olive oil, salt, and pepper until smooth and creamy.

Serving

  • Once the carrots are done, remove from oven and garnish with fresh chopped parsley. Serve with whipped feta.

Notes

Allow the carrots to caramelize fully for depth of flavor. Feel free to mix in your favorite spices or herbs. Leftovers can be stored in an airtight container for up to 3 days.
