Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.

Mixing

  • In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add dry ingredients to the wet mixture, alternating with milk. Start and end with dry ingredients.
  • Gently fold in the fresh raspberries.

Baking

  • Divide the batter evenly between prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cooling and Frosting

  • Let cakes cool in the pans for 10 minutes before transferring to a wire rack.
  • Beat the softened butter for the buttercream until creamy. Gradually add powdered sugar, lemon zest, and lemon juice, mixing until smooth. Adjust consistency with milk.
