Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, finely ground pistachios, and melted butter. Mix until well combined, then press the mixture firmly into the bottom of the prepared pan.

Making the filling

  • In another mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, vanilla extract, and pistachio paste until fully combined.

Baking

  • Pour the cheesecake filling over the crust in the springform pan. Bake for 45-50 minutes or until the edges are set and the center jiggles slightly.
  • Turn off the oven and let the cheesecake cool in the oven for about 1 hour to prevent cracks. Then refrigerate for at least 4 hours, preferably overnight.

Topping and serving

  • Beat heavy cream and powdered sugar together until stiff peaks form. Gently fold in additional pistachio paste for extra flavor.
  • Spread the whipped topping over the chilled cheesecake and garnish with chopped pistachios just before serving.

Notes

Use room temperature cream cheese for a smoothly blended filling. Line the springform pan with parchment paper for easier removal. Consider adding a layer of pistachio butter on the crust for an extra indulgence.
