Preparation

  • Preheat your oven to 325°F (163°C).
  • For the crust, pulse the crushed pistachios, sugar, and melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan.
  • Bake the crust for about 10 minutes, then remove and allow it to cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add the sour cream, lemon juice, lime juice, and vanilla extract; mix well.
  • Add the eggs one at a time, beating well after each addition. Pour the cheesecake batter into the cooled crust, smoothing out the top.
  • Bake for 50-60 minutes or until the edges are set and the center has a slight jiggle.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
  • Refrigerate the cheesecake for at least 4 hours or overnight.

Cherry Topping

  • Combine cherries, lemon juice, lime juice, and honey in a small saucepan. Cook over medium heat for about 5-7 minutes until the cherries release juices and the mixture thickens slightly.
  • Allow this mixture to cool to room temperature.
  • Once the cheesecake has chilled thoroughly, pour the cherry topping over the cheesecake and sprinkle with chopped pistachios for garnish.
