  • 1 lb ground beef Use lean ground beef for a lighter soup.
  • 1 can (15 oz) diced tomatoes Choose fire-roasted for added flavor.
  • 1 can (15 oz) corn, drained Can substitute with frozen corn.
  • 1 can (15 oz) pinto beans, drained and rinsed Can use other beans if desired.
  • 1 can (15 oz) diced potatoes Fresh potatoes can also be used, diced.
  • 1 small onion, diced Use yellow or white onion for flavor.
  • 2 cups beef broth Low sodium is an option.
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Preparation

  • Begin by browning the ground beef in a skillet over medium heat. Drain any excess fat.
  • In your crock pot, combine the browned beef with the diced tomatoes, corn, pinto beans, diced potatoes, and onion. Stir gently.

Cooking

  • Pour in the beef broth and stir to combine.
  • Add chili powder, garlic powder, smoked paprika, salt, and pepper. Stir well.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  • Once cooking is complete, give the soup a stir before serving.

Notes

Optional extras include other vegetables like bell peppers or carrots. For a thicker soup, mash some beans or add cornstarch. Substitute ground beef with lentils for a vegetarian option.
