Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, powdered sugar, and salt.
  • In a separate large bowl, cream together the softened butter, vanilla extract, and almond extract (if using) until light and fluffy.
  • Gradually add the dry ingredients to the butter mixture, mixing until combined into a soft dough.
  • Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  • Once chilled, roll the dough out on a lightly floured surface to about 1/4-inch thickness.
  • Use a floral cookie cutter to cut out shapes and transfer them to the prepared baking sheets.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Remove them from the oven and cool on a wire rack.

Royal Icing Preparation

  • While the cookies cool, prepare the royal icing. If using egg whites, beat them until stiff peaks form and then gradually add powdered sugar and lemon juice.

  • Divide the royal icing into small bowls and tint each with gel food colors.
