Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat, letting it shimmer invitingly. Once heated, add the diced onion and minced garlic. Let sauté until translucent and fragrant, about 3-4 minutes.
  • Toss in the chopped celery and carrot, stirring well. Cook for an additional 4-5 minutes, allowing the vegetables to soften.
  • Stir in the tomato paste, Old Bay seasoning, paprika, cayenne pepper, salt, and pepper.
  • Pour in the seafood stock and bring to a gentle simmer. Cook for about 10 minutes.
  • Add the crab meat and shrimp to the pot, stirring gently. Cook for an additional 5-7 minutes until shrimp are pink and crab is tender.
  • Lower the heat and stir in the heavy cream and butter until smooth and creamy.
  • For a velvety texture, use an immersion blender to puree the bisque to desired consistency, or leave it chunky.
  • Serve hot, garnished with fresh herbs or a light drizzle of cream.
